26.1.2012: ROULADEN ORIENTALISCH GEFÜLLT/ MEAT PARCELS WITH MIDDLE-EASTERN STUFFING

26.1.2012
**************************
Today I "played"... I made little parcels of beef and stuffed them  with a mideastern inspired mix:
i spread them on the counter and seasoned with a generous sprinkle of herbed salt, Ras el hanout( a kind of moroccan curry)and Cuminpowder, then I smeared the rest of the celeryroot pure from the day before over this and sprinkled  dried cilantroleaves and slivered almonds   over this( I had toasted them without fat in the microwave). On the large end of the beef strip i gave  a spoonful of soaked raisins . I softend the stries of banana shallots(the french ones), but you can substitute regular ones as well)in a generous amount f butter with a generous sprinkle of Ras el hanout spice and gave a splash of french Muscatwine( a natural sweet wine, you could replace white port or  sweet sherry as well) over them to taste and gave  sponnful of those shallots in wine on the raisins. I sprinkled the whole thing with owdered black iraqi limes( they are smoked)

****************************

I rolled those nice little goodies up tightly and secured the ends with a wooden toothpick and fried them in a mix of oil and butter from all sides, until they were nicely browned ,put them in a large  pot and sprinkled them generously with the herbed salt. In the pan I had fried all this in, I gave one stick of  leek, cut up in small pieces in some butter  sprinkled ras el hanout over it , when they started to soften, i spiced with half a vegetable stock cube and gave generous splash of that sweet wine and spooned this over my meatparcels and added about 200 mls of a concentrated beefstock, I had made the week before....

**************************

I covered the pot and put this in the preheated oven at 200°C which I lowered to 180°C after 15 minutes. I left them to finish for 2 hours, took them out of the liquid, which I finished off with a generous splash of heavy cream and then mixed all with an immersion blender

those beauties were served with basmatirice, which my husband hat cooked in the same beefstock which he had spiced up with lots and lots of finest cinnamon powder. .....

we liked this dish very much and will surely make it again

Lachswurst.... eine geniale Idee von "Playing with fire and water"

Ganz in Weiß...

Ganz in Weiß..../ all in white....( this is the title of a popular song of the 60s referring to the bride's dress...)

I wanted "to play" and decided on a dish "all in white".... I had some nice scallops in the freezer and  some already cooked celeryroot. ... and decided to combine this...

I diced about 500 g of the celeryroo, about 100 g of creme fraiche, a dash of llime and about 10mls of hazelnut-oil into my blender and seasoned with fleur de sel and freshly ground white pepper, then mixed up everything  soft and creamy... I adjusted the seasoning and added some white port, I liked the sweetness with the celeryroot.

Scallops were marinated with some orangepepper-mix a dah of lime and some olive oil.

in a small pot i heated carefully  a little bit of water and a decent piece of butter  and swirled everything around to keep the emulsion from separating. when the emulsion reached 45 °C I put in the scallops, swirling and turning them constantly to ensure even warming of them...

*********************

For plating  I spooned some of the celeryroot-puree into some wide stacking rings to make a nice shape on the plate and arranged the sliced scallops around the base. I drizzled the whole dish with some basil-flavored oliveoil and sprinkled with some freshly ground white pepepr and fleur de sel...

Mein kleiner Engel/My little Angel

Today I was cleaning the windows and found this last little angel( windowcolours) in a dark corner. During Advent I have many of those little creatures "flying" around the house, I think I made at least 20/30 of 'em....

************
Outside of italy more or less unknown  is this wonderful vegetable. It's a kind of chicory and in this young stage of it's life it is only slightly bitter, but enriching salads with a crunchy note... Sometimes I used it for a wonderful combination with pasta:  shaved into rings  together with skinned orange segments and an emulsion mixed together of oliveoil and orange juice

Today we had this puntarelle salad, mixed with endives with a tuna-omlet: fresh tuna . cherry tomatoes, french scallions and basil all chopped up and mixed with beaten eggs , salt, pepper and freshly squeezed ginger and carefully fried from both sides, so the tuna is more or less rare...
